Darby’s launches wholesale bakery


Darby’s, the oyster bar, grill and bakery in Nine Elms, Battersea, has just launched its wholesale bakery at the same site.

Founder Robin Gill’s bread programme is an integral part of his restaurants Darby’s, Sorella, The Dairy and Rye by the Water and now the bakery products will be available wholesale.

The products includie the signature 1kg sourdough loaf, baguette and 2kg ciabatta sandwich loaf, alongside their much-loved pastries including their cinnamon bun, and kouign amman - a traditional Breton pastry finished with a coffee, miso glaze.

Darby’s use a choice of heritage grains and combine processes of organic crop farming from Gilchesters Organics that Head Baker, Matt Thornton, implements throughout the products including the baguettes where they use overnight fermentation to increase flavour and structure.

Thornton was head pastry chef at The Greenhouse Mayfair and played a crucial part in achieving 2 Michelin stars in 2013. He then moved into baking and joined forces with Fergus Jackson in launching the celebrated bakery and cafe Brick House in Peckham.
