Francesco Mazzei partners with Crate to Plate at Sartoria

Francesco Mazzei, Chef Patron of D&D London's leading Italian restaurants Sartoria, Radici and Fiume, is proud to announce his partnership with Crate to Plate, the pioneering urban farm start-up that harnesses state-of-the-art hydroponics technology to grow the highest quality produce.

Working closely together, Francesco has grown several classic Italian ingredients with Crate to Plate, which are now available for guests to enjoy in a bespoke menu at Sartoria.

Selecting ingredients that are essential to his Italian recipes and the foundation of his restaurants, Mazzei’s menu highlights Crate to Plate’s cavolo nero, rocket, red romaine and basil.

The dishes includes: Cavolo nero, almonds, garlic & chilli soup; Homemade tortelli, Ligurian Crate to Plate pesto; Charcoal Truchas red romaine, fine herbs oil, Grana Padano & balsamic, and Lemon basil panna cotta.

Reflecting on the partnership, Mazzei said, “Top quality ingredients are essential to Italian cooking, and this has always meant importing many products from Italy. With Crate to Plate, I can source locally without compromising on flavour or quality. The standard of produce I receive is phenomenal.

'With supply chain issues amplified by Brexit and the Covid-19 pandemic, finding a way to source the highest quality produce through Crate to Plate has been a game changer. It is also brilliant to reduce the food miles of the produce we are using.

'It has been a joy to create this menu for Sartoria, which celebrates Crate to Plate produce but also represents a new way of thinking about how we source our ingredients.”
