Pan Pacific London, the first European outpost of the renowned Singaporean hotel group, has announced that guests can now book tables at Straits Kitchen, Ginger Lily and The Orchid Lounge.
The new hotel and these three of the five innovative hospitality offerings will open on 1 September.
Led by multi award-winning Executive Chef Lorraine Sinclair and renowned Executive Pastry Chef Cherish Finden, as well as expert sommeliers, mixologists and tea sommeliers, each offering will incorporate the melting pot of cuisines that represent multicultural Singapore.
Straits Kitchen
Guests at Straits Kitchen will be able to feast on a menu carefully crafted by Singaporean Group Executive Chef, Tony Khoo, Pan Pacific London Executive Chef, Lorraine Sinclair and Straits Kitchen Head Chef, Soon Wong, with the team working closely with British producers to source quality local produce to minimise their carbon footprint whilst bringing authentic flavours to the table.
Open for breakfast, lunch and dinner the menu will reflect the wide range of cooking styles brought into Singapore through the Straits of Malacca.
Breakfast dishes will include Straits Specials such as Banh Mi - Pork Pickled Vegetables, Chilli and Pork Floss; Straits Kitchen Congee; and Kaya Toast with Coddled Eggs. More traditional breakfast fare will also be on offer including Eggs Benedict and Royale; Lobster Omelette Thermidor Hollandaise; and Belgian Waffles with Caramelized Banana, Milk Chocolate Sauce alongside a selection of pastries, yogurt and fruit dishes.
The A La Carte menu will feature an array of flavour and texture combinations, with key dishes including Teapot Double Boiled Soup with Galangal, Red Dates, Wolfberries & Chicken, Wok Fry Singapore Chilli Crab; Scottish Lobster Nonya Laksa; and Butter-Aged Buccleuch Beef with roasted black garlic, Himalayan salted chips.
Desserts, created by Executive Pastry Chef Cherish Finden and her team, will fuse classical pastry techniques with flavours inspired by Singapore, featuring Kaffir Lime Pavlova, Sweet & Sour Tropical Fruit Salsa, Mango And Kalamasi Sorbet; Mango Panna Cotta, Coconut Sago Soup & a Fortune Cookie; and Yuzu Crémeux, Raspberries Compote, Matcha Ice- Cream, Shiso Leaf.
All dishes can be paired with a carefully curated wine list designed by Head Sommelier Nobuko Okamura, formerly of Coya Mayfair. The menu will feature 500 bottles, including Chinese wines rarely seen on UK menus such as a 2018 Kanaan Winery Ningxia Riesling from Ningxia, China and a 2017 Chateau Changyu Moser XV Helan Mountain Cabernet Sauvignon from Ningxia, China.
Ginger Lily
Ginger Lily (pictured) will offer a premium drinks experience, bottling the buzz and excitement of Singaporean bar culture for London. The bar will boast an extensive Champagne list from over 200 houses and the largest list of by-the-glass bubbles in the City of London, as well as a specialist rum menu.
Inspired by Singaporean flavours, the cocktail menu has been created by Francesco Putignano, formerly of Seabird at The Hoxton Southwark. Signature cocktails will include Monserrat - Apple Infused Pisco Aba, Lemon Sorbet, Dry White Wine, Apple Akashi Reduction, Bitters; Gold Milk Punch - Havana 7 rum, Mount Gay Black Barrell rum, Vermouth del Professore Rosso, Vanilla, Lemon, Bitters, Cinnamon, Nutmeg; Cast Away - Zacapa 23, Perique, Sugar Cane, Bitters, Citrus and French Spritz - St Germain, Suze, Franklin, Sons Soda Water, Champagne Deutz Brut Classic.
Ginger Lily will also be home to over 150 rums, including rare and lesser-known bottles from around the world including Forsyth’s from Jamaica, Neisson from Martinique and El Dorado from Guyana. Chef Sinclair has also created a small plates menu to perfectly compliment the drinks offering.
The Orchid Lounge
Created by award winning Executive Pastry Chef Cherish Finden, the afternoon tea offering at The Orchid Lounge will be a uniquely sumptuous and serene affair.
Combining her unique flair for Asian flavours with the traditional British tea, the Singaporean-inspired Kopi Tiam, will feature some of Cherish’s childhood favourite sweet treats such as Peranakan Pineapple Tart - Buttery Pastry with Pandan Pineapple Jam; and Kueh Lapis - Moist Spice Cake.
A selection of hand made pastries will also feature, including Coffee Tarik - Intense Coffee, Creamy Mascarpone, Kahlua; and Chocolate - 67% Pan Pacific Chocolate, Gula Malaka Brownies, Hazelnut. To round off the offering Asian savouries will also feature Soy & Ginger Marinated Salmon Boa; and Mini Dim Sum Basket to name a few.
Pan Pacific London’s Afternoon Tea will be accompanied by the finest teas from the Rare Tea Company including a bespoke blend specially crafted with Cherish Finden and Henrietta Lovell, known as the Tea Lady. To further support their ethos of supporting local, British producers, the Afternoon Tea is the only one in London to serve British Sparkling Wine as their preferred pairing over Champagne.
The list will include a selection from some of the country's most revered vineyards including Rathfinny and Nyetimber as well as the more artisanal such as Breaky Bottom, all of which will perfectly complimenting the afternoon tea offering.
