Pop-up kitchen duo permanently join E1 restaurant & wine bar


Following their recent sell-out chef residency at Crispin, the chefs behind roving restaurant pop-up Kitchen FM, Fabien Spagnolo and Max Truel, have become a permanent fixture at the all-day restaurant and wine bar, which opened in Spitalfields at the end of last year.

Before forming Kitchen FM, the pair's experience comes from Pollen Street Social, The Ninth, Frenchie, Stem & The Corner Room at Bethnal Green Town Hall.

Presiding over the small plates dinner menu from this week (including the famed ‘one of everything’ option for which Crispin has become known), Spagnolo and Truel bring their own stamp to the kitchen; drawing on their previous restaurant experience in Paris and London and using classic French cooking techniques, the pair aim to deliver a menu of moreish, modern, seasonally-focused dishes inspired by the food they enjoyed growing up in the South of France.

On the menu this week:
Beef tartare, cured egg yolk & black garlic
Salmon, tomato consomme & seaweed
Roasted mushroom, tarragon broth & walnut
Almond cake, strawberry, milk jam & coconut ice cream

The menu will be paired alongside Crispin’s natural and low intervention wine list, curated by Fernando Berry of Otros Vinos. With bread supplied by east London’s celebrated Dusty Knuckle bakery.

Launched in Spitalfields in late 2018 by young entrepreneurs Dominic Hamdy and Oliver Hiam (founders of Scotchtails & speciality coffee shop Lundenwic), Crispin offers 40 covers inside and a further 20 on the outdoor terrace.

Housed in an impressive purpose-built zinc and glass pavilion, the restaurant is just five minutes’ walk from Liverpool Street station on the edge of the iconic Spitalfields Market, and is open all day from breakfast until late, seven days a week.
