Jamie Park creates groundbreaking dishes for World Vegan Month

Head Chef of Andam Handling's The Frog Hoxton, Jamie Park, who has a real passion for creating vegan dishes, is pulling out all the stops for November’s World Vegan Month.

Available from 1 November through to the end of the month, Park has created a sustainably-based tasting menu and includes some groundbreaking dishes using locally sourced ingredients.

There are snacks like Kentucky fried king oyster & pine (pictured), Spent coffee, artichoke, pear & dill, and Carrot, mint & hazelnut.

There is also a daily-changing salad made with a selection of at least ten different leaves and herbs grown at Walthamstow’s hydroponic farm Harvest London.

Also, there's a pumpkin dish that uses the skin as well as the flesh, and ice cream prepared from leaves collected from a fig tree growing in Hackney.

Park commented, “It’s such a pleasure to celebrate the increase in vegan dining. It’s an option that’s at the heart of what we do at The Frog Hoxton, and we take great pleasure in creating vegan dishes which fit so well into our fine-dining ethos.”
