Where The Pancakes Are launches crowdfunding campaign to boost expansion


Where The Pancakes Are, the pancake specialists in London Bridge and Fitzrovia, has just launched a new crowdfunding campaign to support its expansion plans across the UK.

Following two previous successful crowdfunds, the new campaign, launched via Crowdcube, will be looking for £550k investment. Each Crowdcube investor, whether pledging £100 or £25k, receiving a slice of ownership in addition to a number of rewards including at-home pancake boxes, free pancakes on Shrove Tuesday or year round discounts across the restaurants.

The money raised will support Patricia’s mission to ‘Spread the pancake love’ with aspirations to open 16 restaurants in the UK by 2026.

Founded by Patricia Trijbits in 2015, Where The Pancakes Are was born out of Patricia’s desire to bring people together over a shared love of food, hosting a series of pop ups and cooking classes before opening her first restaurant in Flat Iron Square in 2016.

Inspired by the pancake restaurants so well loved in her native Holland and across the USA, Patricia has made it her mission to spread the pancake love in the UK, creating restaurants that are accessible to all, using only the highest quality ingredients to create a menu of both deliciously sweet and savoury pancakes.

With buttermilk favourites including the Classic American, with Swaledale Butcher’s streaky bacon, blueberries and Grade A pure maple syrup, alongside the popular Dutch Babies, an old German pancake that resembles a giant Yorkshire pudding, the all-day menu offers the perfect selection of dishes for those looking for a hearty but healthy meal.

With queues around the block since opening its doors, Where The Pancakes Are has gained a loyal following of pancake obsessives over the years, regularly being voted one of Conde Nast Travellers ‘Best Brunches in London’ and ‘Best family-friendly restaurants’. Even the harshest of critics have succumbed to the joy of the pancakes, with restaurant critics including The Sunday Times’ Marina O'Loughlin a fan - “The fluffiest pancakes and great ingredients”.

During the pandemic, Where The Pancakes Are expanded their offering, opening a second site on Charlotte Street, Fitzrovia as well as launching an online shop selling their signature pancake mix, brunch boxes and special occasion gift boxes for those looking to recreate the joy of pancakes at home.

Patricia remarked, “Our pancakes are so well loved by our customers, we are excited to continue our expansion across the UK to bring our pancakes to as many people as possible - I like to think of it as spreading the pancake love! With pancakes such a versatile and often healthy meal option, there is no reason why we shouldn’t all be enjoying them all more regularly.'
