Radio Alice & Gail’s Bakery launch pizza profiteroles


Matteo Aloe, co-founder of Radio Alice Pizzeria and Roy Levy, Head Baker of Gail's Artisan Bakery have joined forces to reclaim the profiterole.

Originally created by chef Popelini in a Florentine kitchen in the 16th Century, Levy and Aloe will return the profiterole to its Italian roots with their ‘pizza profiteroles’

Combining Levy’s pastry skills with Aloe’s signature sourdough recipe - using organic flour, mother yeast and 24hrs fermentation - the duo will fill their pizza profiteroles with vanilla ice-cream from The Parlour in Chelsea, and top with organic chocolate hazelnut sauce and crunchy peanut butter.

Fellow dough-lover Emma King, who co-founded GAIL’s Bakery in 2005, teamed up with brothers Matteo and Salvatore Aloe to help bring their sourdough pizzas from Italy to London, opening Radio Alice in 2016.

King said, “I’ve been lucky enough to work with both Roy and Matteo who are hugely talented and have such a passion for sourdough; they find authentic producers and then create something really unique. It was a lot of fun getting them together over a few negronis and plenty of profiterole tasting!”

Radio Alice X GAIL’s Bakery ‘Pizza Profiteroles’ are available in Radio Alice’s Pizzerias (Clapham and Hoxton) from now and throughout summer, and Canary Wharf when it opens at the beginning of July.
