Internationally acclaimed mixologist Mr Lyan (Ryan Chetiyawardana) is to open a new low waste restaurant and bar concept in London's N1, on 7 September.
Cub, which will be run in association with Doug McMaster, the man behind Brighton’s zero waste restaurant Silo.
The kitchen and the bar will be brought together in a single shallow counter bar which will span the restaurant.
The menu, which wwill change weekly with new ingredients and methods, will offer snacks and appetisers, plates that have accompanying drinks and plates that don’t. There will also be a tasting menu with three plates, four drinks, and 'off-menu tastes and snacks'.
Dishes will include: Krug Champagne with water jelly and spiked herbs, Japanese knotweed with raw sheep’s milk & ramson, Compost Smoked Carrot, Buffalo Curds & Whey, Tomato brined in sea water with seaweed & sea herbs with smoked rye amazake Belvedere vodka & rhubarb.
