Brindisa, food retailer, wholesaler and tapas restaurant chain, has supplied some of London’s top restaurants with the very best Spanish produce for almost thirty years. On 19 September, Brindisa founder Monika Linton is inviting some revered chefs into the kitchen to showcase Ibérico Pork; a treasured ingredient in Spanish cooking.
Richard Turner, Rowley Leigh, Margot Henderson and Florence Knight will join Brindisa Head Chef Josep Carbonell at Brindisa Rupert Street. Each chef will showcase a different cut of fresh Ibérico de Bellota pork from Señorio de Montanera in the Dehesa region of South Western Spain.
Linton said, “We wanted to take Brindisa Rupert Street back to our origins; championing Spanish produce and showcasing the depth of Spain’s food culture.
'Spanish cooking is so much more than just the tapas dishes everyone is familiar with – this is an invitation to discover the wealth of choices and cuts the unique Ibérico pig provides – Señorio de Montanero is a fine example of a dehesa farmer of Ibérico pigs who offers us excellent Ibérico fresh meat along with charcuterie and hams.
'We’ve gathered chefs we’ve long admired and can’t wait to showcase the versatility of Iberico pork, often referred to as ‘the carnivore’s ultimate meat.'
Centred around the open kitchen, the restaurant’s interiors will reflect the craftsmanship and care taken in the kitchen towards ingredients. A warm, paired back palette will feature simplistic and natural materials whilst the kitchen’s open charcoal grills will provide a dramatic backdrop.
Linton also operates the five Brindisa Kitchens restaurants and tapas bars, a shop and chorizo stall in London’s famous Borough Market, Brindisa Kitchens is the home of authentic Spanish food in London.
