Chicago Rib Shack rescued from administration


American-style BBQ restaurant chain, Chicago Rib Shack has been sold out of administration by Quantuma, securing the future of 72 jobs at four restaurants.

The American BBQ restaurant chain, which originally had six sites, was sold in a pre-pack deal, rescuing London restaurants in Westfield Stratford City, Clapham and Aldgate East, and one at Trinity Kitchen in Leeds.

Founded in 2010, the company had an annual turnover of over £4m in its last reported financial year. The brand itself dates back to the early 1980s, having first launched in 1982 in Knightsbridge.

Chicago Rib Shack serves up all-American meaty dishes including the much-loved ribs, burgers and chicken wings, with sides of 'slaw, onion rings and fries.

The original recipe for the ribs remains and the meat and pork for the ribs are carefully chosen by Executive Head Chef, Thomas Kiss. They are smoked over applewood chips for a minimum of six hours in a wood burning oven at 107°C.

Diners can also enjoy cocktails and alcoholic shakes from an extensive list, as well as wine, beer, cider, in-house made soft drinks and floats.
