A new restaurant from Australian chef Brett Redman, Neptune, at the newly opened Principal London hotel in WC1, is set to officially open on 25 May, with previews from today.
Chef Brett Redman and his restaurant partner Margaret Crow have a knack for creating neighbourhood restaurants with the buzz – whether it’s Elliot’s in Borough Market or The Richmond in Hackney.
Their latest venture ‘just happens to be’ a part of The Principal London, but it’s the antithesis of a hotel-restaurant. Instead, it is quirky and full of theatre — from signature dishes prepared on a trolley by the table to sharing platters that foster a genuine sense of community, and a raw bar for a dash of affordable luxury.
Dishes will include Scallop carpaccio, ajo blanco, & dulse, Hot smoked trout, seaweed tartar sauce with cucumber & dill salad, followed by Amalfi lemon & grappa sorbet. Seafood platters will serve up Scottish langoustines, Soused mackerel, carrot & horseradish, Bonito, young ginger & chives, Hardshell clam aguachile, and Wild mussels, fennel & bay sofrito.
