New GM for Michelin-starred Aquavit


Michelin-starred Aquavit London, the contemporary Nordic all-day dining destination in St. James’s, and sister restaurant to the two Michelin-starred Aquavit New York, has appointed Giancarlo Princigalli as General Manager.

Giancarlo brings over a decade of fine-dining and Michelin-star restaurant experience to Aquavit London, joining from The Carlyle Restaurant in New York, part of Rosewood Hotels, where he was General Manager.

Prior to that he was General Manager at Caprice Holding’s Harry’s Dolce Vita, and at Hakkasan Group’s Michelin-starred City restaurant HKK. Giancarlo has also held managerial roles at Michelin-starred Alyn Williams at The Westbury, two Michelin-starred Marcus Wareing at The Berkley, and Gordon Ramsay Holdings.

As General Manager Giancarlo will draw on his experience to oversee a team of 50 in the successful re-opening and smooth running of all aspects of the London restaurant, including financial business compliance, HR and training, all the while working closely with Head Chef Jorjon Colazo.
