The Royal Academy of Culinary Arts (RACA) have awarded Nikola Krikavova Pastry Demi Chef of Hakkasan Hanway Place the Annual Awards of Excellence.
The Awards of Excellence is one of the most distinguished accolades for young professionals, and Chef Nikola has received a special distinction, ranking her as top 5 within the 20- 26 age group in the UK.
The examination was held in Birmingham; eight pastry chefs attended the final five and half hour examination. The examination was themed with a summer fair ground, having the chefs create a sugar show piece stand which had to hold a selection of beautiful petite fours to include raspberry bonbons, seasonal fruit financier’s and passion fruit tartlets.
They also had to make puff pastry which had to be turned into 12 jaw-dropping pieces of Alumettes filled with fresh strawberries, and Chantilly cream.
