Waitrose sushi counters launch in Scotland

Two branches of Waitrose in Scotland has just launched dedicated sushi counters in co-operation with Sushi Daily, the European market leader in sushi bars and counters.

The new counters at Byres Road, Glasgow and Comely Bank, Edingburgh now offer freshly made in-house sushi.

The move is designed to ensure that Waitrose is offering its customers delicious, healthy and convenient food to eat on the go, or a quick and healthy option for an evening meal.

Waitrose has seen sales of sushi shoot up by 20% across the UK generally (according to the Waitrose Food and Drink Report, published last week) and Scottish branches have also enjoyed double digit growth across their sushi lines.

The Sushi Daily counter will be headed by a team of skilled sushi artisans. They will prepare fresh hand-made and sustainably sourced sushi and maki throughout the day. All the salmon used on the counters is Scottish.

There’s plenty to choose from, including vegetarian and no raw fish options as well as a variety of platters made to order, for meetings and parties.

James Breckenridge, Head of Retail Operations for the Scottish branches of Waitrose said, “The new sushi counters in Edinburgh and Glasgow branches underline our determination to make sure we continue to innovate.

“Our customers' lifestyles are changing with the growth of eating on the move - and the investment we have made during last few years has been designed to respond to that shift.

“Customers are increasingly attracted by products that can deliver for them on quality, convenience and health and sushi does this brilliantly.”
