Macellaio RC launches Butchery Masterclasses


In honour of National Butcher’s Week, Italian steak restaurant brand, Macellaio RC has launched Butchery Masterclasses at its SE1 branch.

Designed for 6-12 participants, the masterclasses at the Union Street site are suited to both novices and connoisseurs alike, promising to teach guests their T-bone from their topside.

To start, the Head Butcher at Macellaio RC Union Street will explain the different cuts of meat and offer tips on how to use their newly acquired skills at home. Guests will also learn about the unique Fassona beef that is favoured by the Macellaio RC kitchens, which due to the hypertrophic muscle growth among the cows, is extraordinarily low in fat and cholesterol as well as being extremely tender.

To follow, there will be a behind the scenes look at the in-house dry-aging process, and guests will put their newly acquired skills into practice, all overseen by the expert team at the restaurant.

The masterclass will also include tips on the best recipes and cooking techniques for each cut of meat, and advice on how to find the perfect wines to match. Guests will then sit down to enjoy a three-course meal in the theatrically designed restaurant.

Macellaio RC Union Street opened in the autumn of 2016, offering guests an authentic Italian steak restaurant that also incorporates a theatrical in-house butchery and a Ligurian bakery.

The company launched in 2012 with its first restaurant in South Kensington.
