Top restaurateurs & master sushi chef to open Japanese-inspired eatery

Ichibuns, a new 90-cover Japanese-inspired restaurant, is set to open in London W1's Wardour Street.

The well-known names behind the venture are Robin Leigh, the man behind Nobu, Busaba Eathai, restaurateur Kurt Zdesar of Les Bains Douches and Ping Pong, and master sushi chef Endo Kazutoshi from Zuma.

The menu serves up ramen with wagyu beef and king crab, and burgers made with a mix of wagyu and prime British grass-fed beef.

Signature dishes include The Hokkaido - two grilled patties with grilled red onions, sauteed shiitake mushrooms, white truffle oil & blue cheese fondue, and Panko meatball - panko crusted fried beef patty with cabbage julienne, Japanese vegetable pickle, spicy yoghurt & curry ketchup.

There's also Japanese spring rolls, like Snow Crab with shiitake mushrooms, shiso leaf, yuzu pepper, cabbage and butter ponzu sauce, and a wagyu cheeseburger version.

For sweet treats, diners can enjoy green tea profiteroles, and Ichi Shakes such as the Sakura Blossom - milk and cherry ice cream, with marinated cherries, marshmallows and cherry sauce.
