Fairmont St Andrews welcomes new F&B director


Fairmont St Andrews, the luxury five-star hotel, has appointed Tristan Allen as the new director of food & beverage.

Joining from the five-star Culloden Estate & Spa in Belfast, Northern Ireland, Allen will be responsible for guiding the venue and ensuring the service and standards are met and the performance objectives are achieved in his team of 75 people.

Allen brings a wealth of experience and knowledge with over 15 years in the hospitality industry. He attended the world famous Ballymaloe Cookery School in Cork, Ireland, which gave him his culinary grounding and was a managing consultant for two restaurant projects in Malaysia and China after completing a degree in hospitality from Dundee University.

Allen will continue to celebrate Scottish food and beverages, which can be seen throughout the hotel, including several unique dining venues such as St Andrews Bar & Grill and the Italian eatery La Cucina. His vision for Fairmont St Andrews will continue to appeal to its broad range of guests, offering culinary classics prepared with Scottish seafood and meats, as well as creatively infused dishes that blend traditional recipes with Scottish produce.
