Director of Bars appointed at the forthcoming 1 Hotel Mayfair

Matteo Carretta has been appointed as the Director of Bars at the upcoming 1 Hotel Mayfair, London's first sustainable luxury hotel with a mission-driven approach. In his new role, Carretta will be responsible for managing the cocktail bar, Dover Yard, and overseeing the drinks program at the hotel's flagship restaurant, Dovetale, under the leadership of Tom Sellers.

Carretta joins 1 Hotel Mayfair from Claridge's, where he served as the Head of Mixology, overseeing operations and development for all of the hotel's bar outlets. With extensive experience working in renowned establishments across Europe, Carretta brings a wealth of expertise to the F&B team at 1 Hotel Mayfair.

Dover Yard, the neighborhood bar at 1 Hotel Mayfair, aims to provide a personalized service and a new style of luxury with Mayfair sensibilities. It will be located on a newly walkable cut-through between Berkeley Street and Dover Street. The bar's drinks program will focus on a sustainable and conscious approach, inspired by the beauty and simplicity of nature. The cocktail menu will feature categories such as 'Repurposed Ingredients', utilizing excess produce from the juice bar and coffee grinds, 'Native Flavours' highlighting British produced spirits and local brands, 'Seasonal Classics' using locally sourced produce, and 'Low and No-alcohol' options. In addition, the bar will offer a comforting food menu designed by Tom Sellers, available throughout the day and into the night, accompanied by energizing music from DJs.

Carretta will also ensure that the drinks offering at Dovetale is closely aligned with the culinary offerings in the kitchen.

Dover Yard aims to attract hotel guests, the local Mayfair community, and professionals from London's hospitality and creative industries. It will provide a welcoming retreat from city life, emphasizing modern hospitality at its core.
