StudMuffin to open at Pop Brixton


This autumn, Pop Brixton will become home to creative gourmet English muffin makers, StudMuffin.

Set up by Matt Woollard and James Lakie, two chefs who met at Leiths School of Food & Wine, StudMuffin has become a staple street food fixture at some of London’s leading markets and festivals, serving up traditional English muffins with creative, bold flavours.

Taking the next step towards a permanent site, their Pop Brixton menu will feature the likes of the All-day Breakfast Muffin, filled with sausage patty, maple bacon, truffle egg mayo and a smoked potato cake, and Haloumi Muffin with pepper salsa, rainbow slaw, artichoke, as well as fries topped with crispy brie, sweet maple bacon, tangy pecorino and fresh spring onions.

With a history of supporting local talent, small businesses and social enterprise, Pop Brixton has become a launch pad for young entrepreneurs in its three year residency, with Kricket and Zoe’s Ghana Kitchen, among the project’s many success stories.

The way has been paved for this new wave of traders by the departure of a number of existing vendors who are taking the next steps in their business growth.

Departing members include Franzina Trattoria, which is set to open in a new Brixton premises later this year; Duck Duck Goose, which hopes to relocate to a larger central London site; and Maria Sabina, whose owners will be vacating their site to travel to Mexico for a three-month research trip ahead of their next step.
