Michelin-starred Jamavar founders to open new Japanese restaurant in Mayfair


From LSL Capital, Koyn, a modern Japanese restaurant inspired by Mount Fuji, will launch in September.

The fifth restaurant of the group from Samyukta and Dinesh Nair, Koyn will be situated om Mayfair’s Grosvenor Square.

The kitchen will be led by Executive Chef Rhys Cattermoul,who has created a menu that will showcase the broad spectrum of Japanese cuisine through rich umami flavours and locally sourced produce.

Midori will be on the ground floor, where diners will find decor inspired by the landscape of Japanese zen gardens and the striking pink moss growing on the fertile volcanic soil of Mount Fuji.

On the ground floor, guests will find themselves in Magma, an immersive subterranean space enveloped within the dark volcanic heart of Mount Fuji, which will feature a robata grill.
