Evolv Collection announces acquisition of Vinoteca and plans to grow Sartoria brand


The Evolv Collection has acquired the wine bar group Vinoteca and plans to rebrand its two venues under the Sartoria restaurant group.

The Farringdon and Bloomberg Arcade locations will be incorporated into the Evolv Collection’s expanding portfolio, marking another step in the company’s rapid growth under chief executive Martin Williams.

Since taking the helm of the group, formerly known as D&D London, Martin Williams has focused on strengthening and expanding its core brands — including Bluebird, Stories, Sartoria, and Chophouse & Tavern.

The two newly acquired sites will be integrated into the Sartoria brand, offering small plates alongside an extensive wine list. Originally founded by Sir Terence Conran, Sartoria now includes its flagship on Savile Row, the former Fiume restaurant in Battersea, and a new location in the former Launceston Place site, set to open this November.

Each Sartoria restaurant will highlight Milanese cuisine with a focus on varied small plates. Vinoteca di Sartoria in Farringdon will feature cucina piccolo — small plates inspired by Sartoria Launceston Place’s lunch menu — while Sartoria Battersea will pair its small plates offering with artisanal pizza. Meanwhile, Sartoria Liverpool Street, set to open in January 2026, will operate as an all-day destination.
