Mark Baumann to open fourth Bourgee at London Southend Airport


TV chef Mark Baumann is to open his fourth Bourgee restaurant in at London Southend Airport, Essex, with the opening date yet to be announced.

Baumann (pictured right) and his co-director James Welling (left) already operate two Bourgee Essex sites in Chelmsford and Southend, with a third recently opened in Bury St Edmunds.

The Bourgee menu is particularly renowned for steaks, lobster and innovative dishes. The a la carte menu features fillet steak, wagyu beef, whole Bourgee split lobster in cheese sauce with shallots and woodland mushrooms.

Although the restaurant focuses on these two key ingredients, with lobster sourced from Colchester and beef from northern Spain, other dishes include various tapas, charcuterie, halibut, and hamburgers.

The Bourgee burger comes with caramelised onions, Monterey Jack cheese, garlic butter, mayo and skinny fries, and there's also Harissa spiced chicken thighs with red rice, quinoa and borlotti beans.

There's even afternoon tea served on Astroturf with open toasted lobster bagel, steak & caramelised onion brioche, mini chocolate doughnuts rolled win cinnamon sugar, cloudy lemonade, and even a little picnic blanket.

For young gourmets there's a menu called Bijoux Bourgee, which serves up plates such as homemade corn fed chicken goujons, followed by ice cream in a cone with a flake.
