Former Tom Aikens head chef to open pub-restaurant in Berkshire


The former head chef at Tom Aikens in London, Dom Robinson is to launch his own 46-cover restaurant and pub, The Blackbird in Berkshire.

Robinson has taken on the free-of-tie pub on Bagnor high street and will open the doors in October. The leashold property is owned by Wellington Pub Company.

The Blackbird will focus on flavour and good cooking at a reasonable price, employing Robinson’s French techniques using British produce.

There will be a range of menus, including an à la carte option, special Saturday and Sunday lunch and brunch menus, plus pre- and post-theatre menus for theatre-goers on the way to the nearby Watermill Theatre.

Robinson's dishes will include Pressed Ham Hock, apple jam, sourdough, and Smoked Haddock Eccles Cake, parsley for starters; and main plates of Salt Marsh Lamb Rump with courgettes, sea herbs & smoked sardine, and BBQ Butcher's Cut Steak, lardy chips & caper hollandaise.

There will also be Scotch eggs made on-site using locally sourced ingredients and a charcuterie trolley.

Sweet treats include Pumpkin & Orange custard tart, pecans, golden syrup ice-cream, Chocolate & Blackberry Fondant served with violet milk ice-cream, as well as a rotating selection of British cheeses.
