Redemption relaunches WC2 site with new head chef & menus


Vegan restobar, Redemption has just relaunched its Seven Dials site in London's WC2, with a brand new head chef and fresh menus.

Erich Ribeiro (pictured) joins Redemption Bar’s founder, Catherine Salway, and owners, Alex and Saiphin Moore (Rosa’s Thai Cafe, Lao Cafe, Ceviche), in revitalising the popular health-oriented hub and diversifying its food and drink menus to incorporate a balance of healthy and indulgent options.

Ribeiro, who enjoys a plant-based diet, has a wealth of culinary experience under his belt. He worked as Production Kitchen Chef Manager for the Deliciously Ella cafes, where he was instrumental in pioneering healthy dishes for all three locations, as well as cooking at restaurants such as Wulf & Lamb; creative, vegan cuisine in Chelsea.

The new and improved Redemption Bar continues to focus on vegetables, and the infinite ways in which they can be spiced and cooked to create guilt-free taste sensations.

There are simple yet satisfying starters and sides, such as broad bean and avocado hummus with cassava shards and toasted amaranth seeds, bbq cauliflower wings, and lemon & pumpkin mac and cheese.

For larger main options there's Brazilian tofish moqueca, a Brussels sprouts and purple kale winter Caesar salad, BBQ pulled jackfruit with smashed avo, chipotle carrot cheese, tapioca chard and pitta bread, and a vibrant selection of nutritious bowls, Erich’s mouth-watering new plant-based menu has something for everyone.

For dessert, lemon polenta cake with vanilla cream, dried strawberries and purple corn ice cream - as well as other intriguing combinations - also graces the menu.

Redemption Bar is widely known for its refreshing take on alcohol-free drinks, and the bar will pick up where it left off, with a selection of stunning mocktails, including a Cucumbertini and Apple Mockito, along with smoothies and juices, named Retrieval?, Repossession, Rescue and Recovery.

From next week, the innovative drinks offering will also include some alcoholic options for the very first time, with wine, beer and concoctions such as coconutty Espresso Martini and the beetroot and carrot Redemption Bloody Mary, with grated horseradish and smoked plum infused quinoa vodka, making an appearance (all vegan, of course).
