Modern Pantry to launch second site

Anna Hansen will be launching a second branch of her popular Clerkenwell restaurant, The Modern Pantry early next year after signing a lease on a new site in the City. The exact location is not yet known.

Hansen has won many fans for her bright-flavoured, fusion-minded creative cooking to the point that brunches and evening sittings are usually full at the original site.

Danish by origin, born in Canada and raised in New Zealand, Hansen started cooking in London with Margot and Fergus Henderson in the tiny kitchen at the French House, which the chef couple were running at the time. She followed this with a stint with Peter Gordon, the godfather of British fusion cooking, who was preparing to open the infamous Sugar Club at the time.

Hansen is always inspiringly multinational when devising her dishes, yet always uses seasonal and local ingredients. The globetrotting chef will take several culinary tours a year, travelling to new regions and trying new flavours and ways to prepare ingredients.
