Chris Emery to Lead New Restaurant Concept at Crazy Bear Stadhampton

Crazy Bear Hotel in Stadhampton will launch OAK by Chris Emery in January 2025, marking the hotel group's first new restaurant concept in over a decade.

The brainchild of Managing Director Tom Etridge and Chef Chris Emery, OAK will feature 42 covers and offer 'innovative, ingredient-led' dishes inspired by Emery’s extensive culinary career.

The menu at OAK will showcase seasonal and locally sourced British produce, featuring dishes such as steamed brill with scallop, fennel, celeriac, and green curry sauce, as well as cured salmon with burnt cucumber, nori, and lettuce purée.

Emery brings a wealth of experience to OAK, having previously worked at world-renowned establishments, including the three-Michelin-starred Waterside Inn in Bray and Jason Atherton’s Michelin-starred Pollen Street Social.

Emery said he and the team have “created a space and a menu that focuses on letting the seasons guide us.”

The launch of OAK comes just months after the Crazy Bear Group announced plans to seek new investment to evolve its offering and expand its portfolio.

The Crazy Bear Group, which also operates a hotel in Beaconsfield, is working with Savills to secure new funding for the business. The group is seeking appropriate long-term capital through financing partners.

Crazy Bear Stadhampton, the first hotel under the Crazy Bear brand, opened in 1993. The property features a restored and reimagined 16th-century coaching inn, complete with 23 individually styled bedrooms, including five located within the Garden House.

The hotel also boasts a bar, an outdoor terrace, and meeting and event spaces capable of accommodating up to 250 guests, along with parking facilities for up to 100 cars.
